Sesame Crust Cheesecake Bites

These creamy bites will have your dinner guests wanting dessert before the appetizer. The crispy sweet crust will make you want more than just one!

  • 2 packets Old London┬« Sesame Melba Toasts ((8 toasts))
  • 4 Tbsp. Brown Sugar
  • 3 tsp. vegetable shortening
  • 1 tsp. ground cinnamon
  • 1 lb. cream cheese
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/8 tsp. Salt
  • 1/2 tsp. vanilla extract


Preheat oven to 300 Degrees Fahrenheit. Add Melba Toasts into a food processor and process until well ground. Add the brown sugar, cinnamon, and vegetable shortening and begin pulsing the food processor until well incorporated into the mixture. Place cupcake wrappers into a cupcake sheet and create a layer of the Melba Toast mixture in each cup. In a separate bowl, combine the cream cheese, sour cream, sugar, eggs, salt, and vanilla extract. Beat until the mixture is smooth. Add the creamy mixture into each cup until they are 3/4 full. Bake for 20 minutes. Let them cool for 5-10 minutes before putting them into the fridge to cool for 4 hours. Top with fruits or a chocolate drizzle.
