La Melba Grande Fiesta Dip

Old London ® Classic Melba Toasts
tomatoes (2 for pico de gallo, 1 for guacamole)
White onion (1/2 onion for pico de gallo, 1/4 onion for guacamole)
cilantro (1/2 cup needed for both pico de gallo and guacamole)
Salt (1/2 tsp. for guacamole, 1/2 tsp. for pico de gallo)
Combine all ingredients for the Pico De Gallo (2 tomatoes, jalapenos, 1/2 white onion, 1/2 cup cilantro, 1/2 tsp salt) into a food processor and chop coarsely. Combine all the ingredients for the guacamole (avocados, 1 tomato, 1/4 white onion, 1/2 cup cilantro, 1/2 tsp salt) except for the lime and pulse until smooth. Squeeze lime juice into the guacamole and mix to help keep fresh. Add a layer of refried beans into a transparent bowl. Layer mild cheddar for a second layer. Next, add the Pico De Gallo layer. Cover the third layer with fresh guacamole. Top with mild cheddar and cilantro as a garnish. Enjoy!
