Coconut and Spicy Caramelized Banana Pudding Minis

The classic Southern Banana Pudding gets a spicy (and easy!) makeover with the addition of toasted coconut and jalapeno…a perfect addition to your next social gathering!

  • 24 toasts Old London ® Classic Melba Toasts
  • 2 cups vanilla pudding
  • 3/4 cup toasted coconut
  • 2 bananas (sliced and caramelized)
  • 24 sugared jalapeno rings (as garnish)
  • Sweetened Spicy Cream:
  • 1/2 cup - heavy whipping cream
  • 3 Tbsp. - powered sugar
  • 1/2 cup - sour cream
  • 1 tsp. - vanilla extract
  • 1/2 tsp. - jalapeno juice


Place 24 Melba Toasts on serving platter. Top each with spoonful of prepared vanilla pudding. Sprinkle each toast with toasted coconut and a slice of caramelized banana. To prepare the Sweetened Spicy Cream, whip heavy cream until soft peaks form. Add in sugar, sour cream, vanilla and jalapeno juice and whip until stiff peaks form.
