
Baja Guacamole
Serves 1 as a snack
1 peeled Avocado (not too soft), coarsely chopped
2 heaping Tablespoons tiny diced Roma tomatoes
1/4 to 1/2 teaspoon fresh jalapeņo, tiny diced, (to desired heat)
1 1/4 Tablespoon Lime Juice
pinch of salt
Mix all ingredients in a small bowl
Keep chilled until ready to eat with Whole Grain Melba Snacks
For extra zest, add 1/2 teaspoon rough chopped fresh cilantro and 1 Tablespoon minced garlic
